Acorn squash

Acorn squash. You see it on the grocery store shelves every year about this time. It looks interesting, but what the hell do you do with it?

It�s actually pretty good. It has a taste somewhere between pumpkin and zucchini. Cut it in half, lengthwise seems to be easiest. Don�t peel it. Dig the seeds out with a soup spoon. Set the halves down (figure about half a squash per person) in a baking dish with a lid. Sprinkle each one with salt and then very lightly with nutmeg and allspice. Place a sliver of butter in each cavity. Then bake in a 350 degree pre-heated oven for an hour. That�s all there is to it, and it looks impressive because most of your friends have never even tried to cook one.

We had it last night along with Tunisian chicken and couscous. I don�t recommend the combination. The spices don�t match up very well. It would be better with a basic roast chicken or beef. I�ll try to give you the recipe for Tunisian chicken soon. It was good.
